A Sanchez Family Tradition
LaBodega’s is a lifelong dream…
We have always wanted people to experience real Latin Cuisine. We have had the privilege of traveling the world and experiencing many cuisines and in our opinion, Latin Cuisine has some of the most intense flavors in the world! The problem is, most restaurants are only interested in plating and sales. Standards and ideas of food are different for us, we want people to have a real authentic Latin experience! Real Latin food is cooked and prepared with love and with pride. At LaBodega’s, that is exactly what you will get.
The Anatomy of a Mofongo
Mofongo is an Afro-Puerto Rican dish with fried plantains as its main ingredient. Plantains are picked green and mashed with salt and water in a wooden pilón, a kitchen device also known as mortar and pestle. The object is to produce a tight ball of mashed plantains that would absorb the attending condiments and have either pork crackling or bits of bacon inside. Most dressing and mixtures include broth, garlic, and olive oil. It is traditionally served with fried meat and chicken broth soup. Particular flavors result from variations that include vegetables, chicken, shrimp, beef or octopus packed inside or around the plantain orb.
